Mustard Green Kimchi, 갓 김치:
One of the traditional Korean Kimchi that made primarily from mustard greens, known as 갓 (gat). These greens are characterized by their slightly bitter, peppery flavour, which gives the kimchi a unique taste.
Fermenting the mustard greens with a beautiful New Zealand Sweet Chillies and gochugaru sometimes with a little bit of house made Green Plum enzyme for balance.
It’s spicy, tangy, and umami-rich flavour profile, with a bit of crunch from the greens.
It’s pungent, a distinct freshness and a bit of bitterness that makes it stand out. It’s often enjoyed as a side dish with rice and can be used in various dishes, such as soups or stews. The fermentation process also enhances its probiotic benefits, making it a nutritious addition to meals.
