Our White Kimchi is refreshing, garlicky, and mildly tangy.
Made without chili powder, yet infused with our house-dried New Zealand chili, it brings out the natural sweetness of vegetables while maintaining a gentle balance of flavour — light, yet full of character.
A bit of history:
White Kimchi, or Baek Kimchi, is considered the earliest form of kimchi in Korea. Long before chili peppers were introduced in the 1600s, Koreans preserved vegetables simply with salt to last through the cold seasons. Records from as early as the Three Kingdoms period (around the 4th century AD) describe early forms of fermented and salted vegetables — the humble beginnings of kimchi. Because chili was unknown at that time, the earliest kimchi was pale in colour, sometimes decorated with flowers or fruits for added beauty and flavour. That simple, pure style is the origin of today’s White Kimchi.
